Gravelly yes, muddy-slippery no. As long as there's some semblance of grip/ bite, it's ok.
Once you have or need the 2 wheels at different rotational speeds, you're cooked. Make it switchable and have the best of both worlds.
I've never driven a motorcycle with ABS, so I do not understand, that the ABS can not be switching off with immediate effect.

Most ABS- bikes (mainly the roadbikes) have non-switchable ABS.
BMW GS's always had switchable ABS as far as I remember.
How fast it turns off/ on depends on the cycle-rate of the unit.
